Toasted Garlic Bread

Toasted Garlic Bread

INGREDIENTS
1 (1 pound) loaf Italian bread
5 tablespoons butter, softened
2 teaspoons extra virgin olive oil
3 cloves garlic, crushed
1 teaspoon dried oregano
salt and pepper to taste
1 cup shredded mozzarella cheese

DIRECTIONS
Preheat the broiler.
Cut the bread into slices 1 to 2 inches thick.
In a small bowl, mix butter, olive oil, garlic, oregano, salt and pepper. Spread the mixture evenly on the bread slices.
On a medium baking sheet, arrange the slices evenly and broil 5 minutes, or until slightly brown. Check frequently so they do not burn.
Remove from broiler. Top with cheese and return to broiler 2 to 3 minutes, until cheese is slightly brown and melted. Serve at once.

Cheesy Pork Chops with Spicy Apples

Cheesy Pork Chops with Spicy Apples

INGREDIENTS
1 tablespoon butter
1 onion, sliced
1 pinch red pepper flakes
1 apple, cored and sliced
2 teaspoons white sugar
2 tablespoons balsamic vinegar
4 pork chops
salt and pepper to taste
4 slices extra sharp Cheddar cheese

DIRECTIONS
Prepare a grill for high heat.
While the grill heats, melt the butter in a skillet over medium heat. Add the onion, and cook until soft. Season with red pepper flakes then add the sliced apple. Stir in the sugar and balsamic vinegar, and simmer for 5 minutes, or until apples are soft and golden.
Season the pork chops with salt and pepper. Grill for 3 to 5 minutes per side, depending on thickness. Spoon the onions and apples on top of the chops, and top with a slice of Cheddar cheese. Cover the grill, and cook for about 3 minutes until cheese is melted and bubbling.

Slow Cooker Salisbury Steak

INGREDIENTS
2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
1/2 cup Italian seasoned bread crumbs
1/4 cup milk
1/4 cup all-purpose flour
2 tablespoons vegetable oil
2 (10.75 ounce) cans condensed cream of chicken soup
1 (1 ounce) packet dry au jus mix
3/4 cup water

DIRECTIONS
In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. Shape into 8 patties.
Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of chicken soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.

INGREDIENTS
2 pounds ground beef
1 large onion, diced
1 green bell pepper, seeded and diced
1 (10 ounce) can whole kernel corn, drained
1/2 cup barbeque sauce
1 (14.5 ounce) can diced tomatoes, drained
3 (8.5 ounce) packages corn bread mix

DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).
Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture in an even layer in a 9x13 inch baking dish.
Prepare the cornbread batter mixes according to package directions. Spread the batter over the top of the beef mixture.
Bake for 20 to 25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

INGREDIENTS
1 1/2 pounds cod
1 cup salsa
1 cup shredded sharp Cheddar cheese
1/2 cup coarsely crushed corn chips
1 avocado - peeled, pitted and sliced
1/4 cup sour cream

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish.
Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and sour cream.

DIRECTIONS
Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
Lightly salt and pepper the chicken strips.
Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.

Place marinated appetizers onto parchment lined baking sheets. Bake for 20 minutes, or until chicken is done and bacon golden brown. Drain on paper towels. Serve hot.

In 9x13 inch baking dish, stir together macaroni, shredded Cheddar cheese, cottage cheese, sour cream, Parmesan cheese, salt and pepper. In a small bowl, mix together bread crumbs and melted butter. Sprinkle topping over macaroni mixture.
Bake 30 to 35 minutes, or until top is golden.

EASY SALMON CAKES!

INGREDIENTS:
2 cups fresh bread crumbs
2 eggs, beaten
1/4 cup fresh parsley, chopped
1/4 cup chopped green onions
2 teaspoons minced fresh dill weed
1 teaspoon fresh lemon juice
1/4 teaspoon ground black pepper
1 (14.75 ounce) can salmon, drained
2 tablespoons butter

DIRECTIONS
In a large mixing bowl, place 1 1/2 cups bread crumbs. Set aside remaining 1/2 cup. Add eggs, parsley, green onions, dill weed, lemon juice and black pepper. Mix well.
Add salmon and mix with hands, breaking up salmon into small pieces. Form into 8 patties; each about 1/2 inch thick.
Place remaining 1/2 cup bread crumbs on a plate and dip both sides of the salmon cakes into crumbs.
In a large skillet, melt butter. Fry salmon cakes over medium heat for about 3 minutes or until golden brown and crisp. Turn, adding more butter if necessary, and fry about 3 minutes on other side.

INGREDIENTS:
4 pounds baby back pork ribs
4 cloves garlic, sliced
1 tablespoon white sugar
1 tablespoon paprika
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons chili powder
2 teaspoons ground cumin
1/2 cup dark brown sugar
1/2 cup cider vinegar
1/2 cup ketchup
1/4 cup chili sauce
1/4 cup Worcestershire sauce
1 tablespoon lemon juice
2 tablespoons onion, chopped
1/2 teaspoon dry mustard
1 clove crushed garlic

DIRECTIONS:
Preheat oven to 300 degrees F (150 degrees C). Place ribs on a rack in a shallow roasting pan. Scatter 4 cloves of sliced garlic over ribs. Cover, and bake for 2 1/2 hours. Cool slightly.
In a small bowl, mix together white sugar, paprika, salt, black pepper, chili powder, and ground cumin. Rub spices over cooled ribs. Cover, and refrigerate overnight.
In a small saucepan, mix together brown sugar, cider vinegar, ketchup, chili sauce, Worcestershire sauce, lemon juice, onion, dry mustard, and 1 clove garlic. Simmer over medium-low heat, uncovered, for 1 hour. Reserve a small amount for basting; the remainder is a dipping sauce.
Preheat grill for medium heat.
Place ribs on grill. Grill, covered, for about 12 minutes, basting with the reserved sauce, until nicely browned and glazed. Serve with remaining sauce for dipping.

2 different recipes on how to make BUTTER COOKIES.(:

First recipe:

INGREDIENTS:

2 cups butter, softened
1 1/2 cups white sugar
4 egg yolks
1 1/2 teaspoons vanilla extract
4 1/2 cups all-purpose flour
1/2 teaspoon salt

DIRECTIONS
In a large bowl, cream together the butter and sugar. Beat in the yolks one at a time, then stir in the vanilla. Combine the flour and salt; stir into the creamed mixture. Shape dough into logs about 2 inches in diameter. Wrap in waxed paper and refrigerate or freeze until firm.
Preheat oven to 350 degrees F (175 degrees C). Unwrap rolls. You can roll the logs in nuts or sprinkles before slicing. Slice into 3/8 inch wide slices. Place slices 2 inches apart onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Do not brown. Remove to a wire rack to cool completely.

Second Recipe:

INGREDIENTS:
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup white sugar
1 cup butter
1 egg
3 tablespoons cream
1 teaspoon vanilla extract
2 1/4 ounces colored candy sprinkles

DIRECTIONS
Sift the flour, baking powder, salt and sugar together. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg, cream and vanilla extract. Blend thoroughly (this usually works best with your hands).
Form dough into a flattened ball, wrap and refrigerate for at least 24 hours. This mixture can keep for several days.
Preheat oven to 400 degrees F (205 degrees C).
Roll dough out on a floured board to about 1/4 to 1/8 inch thick. Cut out shapes with a cookie cutter and decorate with different types of sprinkles.
Bake at 400 degrees F (205 degrees C) for 5 to 8 minutes.

Hong Kong Trip part 6: shopping with Claudia and family

in fact,the best day in my opinion.

I got to meet up and shop with Claud!!

at 11am,Claud along with her family and maid came over to meet me at my hotel in Tsim Sha Tsui.
went over to a local restaurant to have dim sum breakfast.

sharks fin dumplings,bird nest egg tarts,custard buns,yam balls,carrot cakes,chee cheong fun,kailan,siew mai,har gao...
you name it!
oishi!

after breakfast,Claud's daddy brought us to a street near my hotel with tons of stores selling boots and bags!

after 2 and a half hrs of shopping,I ended up with 2 pairs of boots,3 pairs of socks,2 dresses and 1 clutch.

had to leave at 3 to catch the bus to the airport.=(

I'd like to thank Claudia,and her parents again for bring me around and for their hospitality(:

we were brought to a local beach alongside a temple.

daddy and I sat on the upper deck.
it was soooooo cold~~

after dindin,we went back to mainland for a laser show.
I didnt take any pictures of the laser show cause it's nothing more than 4 lines of laser coming out from the buildings around.nonsense.

HongKong Trip Part1: Airport fun!!~!

it's like 2.25am and Im yet to be in lalaland.
but I was dreaming,not asleep,but dreaming.

It was a lovely day out in the open in the midst of flowers and trees.
The soothing fragrance of the blossoms sweeping pass us along in the breeze.
A straw mat laid on top of the soft green grass and us,baby and I,seated on it.
Glistening in the sun,our wedding bands fitted snugly on our fingers.
Butterflies of pink,purple,white and blue surrounds us,as if celebrating the aura of love emitting from us.
A soft tinkling laughter peeled through the air interrupting the moment of surreal and we turned to see our daughter[!] clad in pink frills stumbling along the vast greens after a purple butterfly with a twirling lollipop in her hands.

had an impromtu FHM shoot this morning[saturday] that lasted for 9hrs.

got woken up by corde before 10am [id nvr woken up before 12nn on a saturday!] hahha.

well, though Id sacrificed my sleep-in,Im glad I went for the shoot(:
apart from Corde and Minli, I made 5new gorgeous friends!

baby bought some bottled hoegarden and 2 softdrinks[lime barcardi and lemonade vodka] some time last week[it shld be a wed or thurs].
Galvin then came down to parc oasis to chill with us.

the day after[or was it 2 days],Galvin along with baby&I headed over to JE to get H.Z some doggie necessities.
caught the move, "Painted Skin" on screen.
not too bad,I rate it 2.8 stars upon 5 stars.

Ive been ill for nearly a week.
along with fever, there were ulcers on my tongue and throat.could speak properly in a couple of days and drank nth more than gruel.
people usually lose their appetite when they're ill,but Im like a total freakcase.
I wanted to have brownies, chips, fries, fried kway teow, chocolate and coffee.

Im nearly all recovered now,thank you for asking.
Baby took great care of me while I was ill.
gruel feeding, temperature taking, medicine feeding.....

For those who like La Mian and Xiao Long Baos,

Ding Tai Feng's a pretty good place for it.

Although Crystal Jade's Xiao Long Baos are a tad bit tastier,
Ding Tai Feng's are ALOT juicier.NICE!!~!
For La Mian,there's no contest.Ding Tai Feng wins hands down.
Crystal Jade's La Mian's texture and taste is no where near Ding Tai Feng's.

I love my baby.
Practically everything he does,I love it.
But the one thing I treasure above all is to see his face the first thing in the morning when i awake.

So,the first person I saw today when I woke up was my baby!!

Headed over to JE to return the seriously overdue cookbooks.
browsed through and loaned another cookbook with shephard's pie recipe and headed over to his place to bake it for dinner!

lecturer talked for 2hrs straight.
one thing i can say bout him,he nvr runs out of topics to talk about.
2hrs leh.tt's like 120mins.
he doesnt even really pause for us to jot down our notes.

Random pictures Ive missed out during the week includes a teeny tiny snail,bitesize mooncakes, heartshaped strawberry and coffee with a tint of red.

while heading out of the condo during one of the rainy nights,
baby and I spotted a really cute teeny tiny snail on the wall.

I probably shld have sth else in the picture for size comparison for better effect though.

From the box of strawberries MrsSong gave me,I found this adorable heartshaped one.
Shared it with baby^^

Baby and I went pass this bakery @ JE and decided to head in for a look.
spotted adorable bitesize mooncakes and bought 4 home.
Greentea flavoured, Coffee flavoured and two lotus.

Coffee was just there accompanying me.
took 2 pictures of him and accomplished the red tint by covering the redlight thingie my phone camera has.

ahhhh.
I miss my baby boy!!~!~!~

I've class till 10pm today and thus I can only see him at 10!!

she brought out another box of chocolates[identical to the one she gave us on Teachers' Day], strawberries and Tiramisu.hahahha.

how I miss those days partying in the art room during art class with the rest.
Mrs Song used to bring the radio down for us so that we can tune into 98.7FM while drawing.
and we'll take turns bringing snacks to class,chips,nachos,biscuits,chocolates,sweets...

then the O'levels.
how hard she worked to help us.
she even bought us lunch during the days we stayed back to do our prep work.
where to find a teacher like that???

we skipped one of the extra classes and went over to Ginza for Lan games.=x

she even threatened to bar us from our O'lvl art.
